| dc.description.abstract | The monograph focused on the development of active starch-plastic packaging derived from brewing malt for packaging fruit and vegetables. In an attempt to use available fruit and vegetables for the research, three fruits (blueberries, plums and blackberries) and one vegetable (pumpkin) were selected. Chapter 1 aimed to construct a literature review on the topics of post-harvest and bioplastics, exploring the topics to be introduced throughout the work. Chapter 2 aimed to evaluate bioplastic material suitable for packaging, using physical-chemical analyses of bioplastics associated with malt bagasse. The results indicated that the material has malleability, physical- chemical stability and degradability suitable for a packaging material. In Chapter 3, the active ingredient was applied to blueberries refrigerated for 28 days in paper and plastic packaging treated with mint essential oil in each type of packaging, concluding that blueberries subjected to the active ingredient have a strong, noticeable residual effect and require further studies. In Chapter 4, the active ingredient was used in a bioplastic vehicle in plums refrigerated for 81 days with starch coating treatments and containing mint essential oil in a bioplastic vehicle during storage. The response was that the bioplastic base associated with the active ingredient of mint essential oil showed a lower incidence of wilting in plums. In Chapter 5, blackberries were stored for 19 days under malt bagasse concentrations of 0%, 9%, 18% and 27%, concluding that the application of bioplastic containing malt bagasse composite resulted in a lower occurrence of rot and leakage in the fruits, in addition to providing low permeability results in the bioplastic base. The analyses indicated that the application of bioplastics containing any amount of malt bagasse resulted in a lower occurrence of rot and leakage in the fruits. In Chapter 6, a diverse range of active ingredients were applied to bioplastic packaging containing malt bagasse: iron oxide; zeolite nanoclay, thymol essential oil and alpha-tocopherol incorporated into starch-based packaging associated with malt bagasse for the storage of minimally processed pumpkin for 12 days. Tocopherol resulted in less browning of the pulp, in addition to the thyme essential oil and iron oxide preserving moisture and presenting a lower rate of noticeable softening progression during storage. | dc.description.resumo | Primou-se pelo desenvolvimento de embalagens amidoplásticas ativas derivadas malte cervejeiro para o embalamento de hortifrúti. Selecionaram-se três frutas (mirtilo, ameixa e amora) e uma hortaliça (abóbora). No capítulo 1 objetivou-se a construção de uma revisão de literatura pertinente aos temas de pós-colheita e bioplásticos, havendo uma exploração dos temas a serem introduzidos no decorrer da obra. No capítulo 2, o objetivo foi a avaliação de material bioplástico apto para embalagens, fazendo uso de análises físico-químicas em bioplásticos associados com bagaço de malte. Os resultados sinalizaram que o material possui maleabilidade, estabilidade físico-química e degradabilidade adequadas para um material de embalagem. No capítulo 3, houve a aplicação de ingrediente ativo em mirtilo refrigerado por 28 dias em embalagens de papel e de plástico tratado com óleo essencial de menta em cada tipo de embalagem, sendo conluido que o mirtilo submetido ao ingrediente ativo apresenta forte efeito residual perceptível. No capítulo 4 ocorreu a utilização de ingrediente ativo de óleo essencial de menta em veículo bioplástico na ameixa refrigerada por 81 dias com tratamentos e recobrimento de amido. A base bioplástica associada ao ingrediente ativo do óleo essencial de menta apresentou menor incidência de murchamento em ameixa. No capítulo 5, executou-se o armazenamento de amora por 19 dias sob concentrações de bagaço de malte em 0%, 9%, 18% e 27%, havendo a conclusão de que a aplicação de bioplástico contendo compósito de bagaço de malte conferiu menor ocorrência de podridão e vazamento nas frutas além de conferir resultados baixos de permeabilidade na base bioplástica. As análises indicaram que a aplicação de bioplásticos contendo quaisquer quantias de bagaço de malte conferiram menor ocorrência de podridão e vazamento nas frutas. No capítulo 6, aplicou-se uma diversa gama de ingredientes ativos em embalagens bioplásticas de nase amilácea contendo bagaço de malte: óxido de ferro; nanoargila zeólita, óleo essencial de timol e alfa-tocoferol para a armazenagem de abóbora minimamente processada por 12 dias. O tocoferol acarretou em menor escurecimento de polpa, além do óleo essencial de tomilho e óxido de ferro preservarem a umidade e apresentarem taxa inferior de progressão de amolecimento perceptível.
