Abstract

The food production and use model runs through a large logistics chain until it reaches the final consumer. The use of the supply chain provides the awareness of all the storage activities, from the moment a product is purchased until the moment of consumption, at a reasonable cost. With the increase in consumer concern with the origin of food, create the necessity for traceability systems inserted in the production chains. A potential improvement that can bring to the supply chain is the use of blockchain. Blockchain allows the generation of transaction protocols in a secure manner. The objectives of the dissertation are to survey the state of the art of supply chain management, develop the blockchain-based method and apply it to the traceability of agricultural products. For the development, the ‘erva-mate’ was defined for the study of its supply chain. Node.js was used for the development of the blockchain, following the main definitions and needs of data immutability and data security. The traceability and transparency of transactions applied to commodities result in the incresse of the user confidence. The fact that traceability is accessible to everyone and the protection that blockchain cryptography guarantees, remove the gaps for misconduct and there is also a decrease in the existence of data that is flawed or does not correspond with reality. It was concluded that blockchain is a way of delivering safe food in a transparent way, as it makes all generated data verifiable and accessible.
